As we are unable to welcome you to our AA Rosette Coast Restaurant this year, our chef has put together a carefully selected menu and a step by step guide so you can make these dishes yourself or together and bring a little bit of the Hythe Imperial into your home.

Pan seared scallops, sautéed new potatoes, leeks, chorizo and lemon oil dressing
Watercress & spinach velouté, wild mushrooms and poached egg
Main Courses
Cider braised Sussex chicken breast, fennel & apple confit thigh, potato fondant, glazed carrot, roasted red onion, kale, wholegrain mustard cream sauce
Pan fried seabass fillet, mozzarella fondant, basil pesto minestrone, cherry tomatoes, rocket leaves
Desserts
Vanilla poached Yorkshire rhubarb and custard mille feuille, white chocolate cream, popping candy
Salted caramel chocolate tart, strawberries and clotted cream
